Spicy Pork Chops with Russian Cabbage



Ordinary Thursday night with simple ingredients.



Ingredients

Russian Cabbage 

1 large carrot, jullienned
1/2 cabbage, chopped
1 large onion, sliced
2 cloves garlic
A pinch of salt
1/2 tsp dry thyme

Pork Chops

3 roasted hatch chili peppers, diced
3 Tbsp olive oil
1 Tbsp lemon juice
A pinch of salt
A pinch of black pepper
4 pork chops


Directions

In a large bowl combine all the ingredients to marinate pork for about 20 min. 
Sauté carrots in a pan with olive oil for about 2 min on medium, add remaining ingredients and cook for about 10 min to finish Russian Cabbage. 
Warm up a pan with olive oil on medium, add marinated pork chops and cook for about 4 min on each side or until it reaches 140 degrees.
